The one-pan lemon chicken I make every week

1 min read

This is the recipe my friends text me for. It takes ten minutes to prepare, bakes while you set the table and tastes like you tried much harder than you did.

Where to begin

Use the best chicken you can find, plenty of lemon and a good pinch of flaky salt. Serve with bread to mop up the juices.

Make it yours

Small, kind and easy to repeat beats big and brief every time.

  1. Heat the oven to 220C (425F).
  2. Toss the chicken, lemon, garlic, oil and oregano in a roasting pan. Season well.
  3. Roast for 40 minutes, until the skin is deeply golden.
  4. Scatter with parsley and serve straight from the pan.

Notes: Swap the lemons for oranges in winter. Leftovers keep for two days in the fridge.
